Tomorrow I'm having a brunch gathering. I found this website talking about how to ripen plantains quickly.
An interesting tip:
"Put the plantains in a bag with one or two apples cut into pieces. The apples will speed the ripening process. I learned this from working in a Nigerian restaurant in Atlanta."
